Chayote Latkes

Latkes are traditionally made with potato, but may be too high in carbs for Keto or Low Carb nutrition. You can replace the potato with chayote for all the same wonderful flavors and far less carbs!

550 grams raw chayote, shredded

90 grams onion, shredded

100 grams raw whole eggs

30 grams protein powder

10 grams onion powder

10 grams garlic powder

6 grams pink or sea salt

Using a food processor or mandolin, shred chayote and onion

In separate bowl, mix eggs, egg white powder, onion and garlic powder and salt.

Mix shredded chayote and onion with wet mix until well covered

Spoon out into nonstick skillet and cook until edges begin to brown. Flip and cook until firm
