Refrigerator Pie

The beauty of this recipe is it’s simple ingredients and great macros, coupled with its flexibility! Match sugar free Jell-O flavors with Unsweetened Kool-Aid mix and the flavors are endless! Add in ingredients like berries, coconut flake or even nuts if you desire for a heathy, whole food dessert that doesn’t have to be JUST for dessert!
8.5 grams Sugar Free Jell-O powder
1 cup boiling water
1/2 cup cold water
450 grams Too Good Vanilla Yogurt (or other low/no sugar vanilla Greek Yogurt)
6.5 grams Unsweetened Kool-Aid powder

Boil 1 cup of water and in a bowl, mix in 1 8.5 gram package of your choice of Sugar Free Jell-O powder. I used Lemon for one and Lemon Strawberry for another. Mix in the remaining 1/2 cup cold water.
In a separate bowl, mix together the yogurt and Kool-Aid powder.

Slowly whisk in the yogurt mix to the Jell-O liquid. Portion out into 6 small ramekins and let cool until firm. This took about 2-3 hours. If you want to add ingredients like berries or nuts, add in about halfway through the firming time so it doesn’t all sink to the bottom. This can also be poured into a 9″ Pie plate if you choose to use a crust. I prefer ramekins so I stick to servings and can decorate per serving.
