Keto / LowCarb Baked Scotch Eggs

These should also be called PROTEIN BOMBS!! Easy to adapt the meat amount based on your macros.
 
5 soft boiled large eggs
250 grams 96% lean ground beef
125 grams extra lean ground turkey
25 grams egg whites
56 grams Your Lean Life Breadcrumbs (crushed pork rinds, egg white powder and seasoning)
 
Soft boil 5 eggs
 
Combine egg white, beef and turkey into a paste. A food processor works very well for this!
 
Divide the meat paste into 5 and pack each portion around each boiled egg.
 
In a Ziplock bag or bowl, shake or roll the ball in the breadcrumbs until coated.
 
Bake at 350 degrees for 45 minutes.
 
To reheat, wrap lightly in a moist paper towel for 30 seconds
 
This makes 5 servings

25 grams unflavored egg white powder

Instructions

Soft boil 5 eggs
