Chilaquilas

Chilaquiles is a classic Mexican breakfast dish made from fried corn tortillas but you can swap that for Pork Rinds! Chilaquiles are often topped with ingredients like shredded chicken, cheese, sour cream, onions, and cilantro, adding layers of texture and flavor.  Use what fits your macros!

100 grams raw eggs (2 large)

100 grams egg white

30 grams pork rinds

30 grams pico de gallo

10 grams shredded cheddar cheese (fat free is an option!)

30 grams canned jalapenos

8 grams scallions

75 grams avocado

Cook eggs in a pan sunny side up

Place pork rinds in a small baking dish. Add sunny side egg on top and layer with Pico de gallo, cheese, jalapeño, and green onions

Broil on high until cheese is melted. Remove from oven and add avocado

Ingredients like chorizo, or other veggies can be edited in to fit your macros!
