Caribbean Coconut Simmer Chicken

Bring the taste of the Caribbean to your dinner table!
 
1089g (4) cubed boneless, skinless chicken breasts
170g (1) diced red bell pepper
400g (1 can) LITE Coconut Milk
2g each of granulated garlic, ground ginger, chili powder, coconut extract
1g each of ground cinnamon, ground nutmeg, ground allspice
.5g each of ground cloves, dried thyme
 
6g sea/pink salt
 
 
Dice pepper.
 
Sautéed cubed raw chicken until outsides are cooked, add diced red pepper to pan and continue to sauté.  
 
While chicken and peppers are sautéing, Mix coconut milk and all seasonings.  Drain off any excess water from the pan and pour milk mix into the pan. 
 
Bring to a simmer and simmer uncovered 5 minutes.
 
Serve hot over rice, cauliflower rice or other veggie!
