Sautéed cubed raw chicken until outsides are cooked, add diced red pepper to pan and continue to sauté.
While chicken and peppers are sautéing, Mix coconut milk and all seasonings. Drain off any excess water from the pan and pour milk mix into the pan.
Bring to a simmer and simmer uncovered 5 minutes.
Serve over your veggie (or carb) of choice!
