Nilla Soft Bakes

These Nilla Soft Bakes look like macaroons, but have the texture of a soft bun.  The vanilla flavor comes through and is a great base for any number of variations, like using PB2 PURE peanut butter powder, unsweetened cocoa powder or coconut flake & extracts.

8 ounces raw egg white

40 grams egg white powder

12 grams vanilla powder

1.5 grams fine pink salt

5 grams Swerve Confectioners Sugar

For the peanut butter batch, I added 30 grams of PB2 PURE peanut butter powder to the dry ingredients

Preheat oven to 350 degrees

Bring the egg white liquid to stiff peaks in a stand mixer.  This should take about 3-4 minutes on high.

Mix in the dry ingredients well and dollop out on a lightly sprayed baking dish.

Bake in a preheated 350 degree oven for about 25 minutes.  Remove from oven and let cool.
