Coconut Shrimp

This is phenomenal! Good protein, low volume and very low carb!
 
250 grams (20) raw, shelled and deveined shrimp
 
50 grams pork rinds
 
30 grams egg white powder
 
3 grams sea salt
 
1 gram ground black pepper
 
30 grams unsweetened coconut flakes
 
50 grams egg white
 
Preheat oven to 450 degrees
 
Run pork rinds through a Cuisinart or coffee grinder to make powder/dust
 
Combine pork rind dust with egg white powdered, coconut flakes, salt and pepper
Dredge raw shrimp in egg whites
 
Cook in air fryer or oven until shrimp is cooked and coating is crispy at 450° for 20 min
