Fried rice is so filling, but can sometimes leave you feeling bloated. It’s heavy in carbohydrates! Here’s a fried “rice” recipe that will leave you feeling satisfied and energized:
Cooked pork
Riced cauliflower
Sweet onion
Bell pepper
Zucchini
Coconut aminos
Olive oil
Chinese five spice blend
Begin by chopping your cooked pork into bite-sized pieces and set aside. Measure out your riced cauliflower and add to your dish. Next, chop your veggies, add to a separate bowl, and mix with coconut aminos, olive oil, and seasoning. Saute your veggie mix. Add the sauteed veggies and pork over your riced cauliflower and stir.
Spaghetti Squash
If you love pasta, spaghetti squash is a great low carb substitution. Here’s what you’ll need to make this imitation spaghetti:
1 spaghetti squash
Beef (or chicken)
Diced tomato (or olive oil)
Begin by cutting your squash into quarters and scooping out the seeds. Add the quarters and a cup of water to an Instant Pot. Cook for 10 minutes before releasing the steam and allowing it to cool. Using a fork, separate the stringy squash from its skin. Put the stringy contents in a bowl and add your sauce/toppings of choice.
Maki Rolls
Are you a sushi lover? Well, you won’t be able to get enough of these low carb maki rolls! You don’t even need rice to make them. Here’s what you’ll need:
1 sushi nori sheet
Cooked shrimp
Cooked riced cauliflower
Mashed avocado
Chinese five spice blend
Ground ginger
Sea salt
Coconut aminos
Begin by mixing your cooked riced cauliflower, avocado, coconut aminos, and seasonings in a bowl until a thick paste forms. Evenly spread the paste across your sushi nori sheet. Once your cooked shrimp has cooled, line one end of the nori sheet with shrimp, roll, and cut into pieces.
