Peanut Butter Pudding

Wanting something sweet is understandable when you are losing fat or maintaining your goals, but those sweet things CAN fall into healthy, whole food nutrition.  This peanut butter pudding is a great protein source, low fat and low carb.  It can even work on keto!

1 packet Knox gelatin

1 cup boiled water

1 cup cold water

450 grams Too Good Madagascar Vanilla Yogurt or Too Good Blended Vanilla 

30 grams PB2 PURE peanut butter powder

1.5 grams pink salt

Boil the one cup of water

While  the water is boiling add one packet of gelatin  (8.6g) into a half cup of cold water in a bowl, mix, and let’s sit for at least one minute

Now add one cup of boiling water into the cold water gelatin mix and mix well 

In a second large bowl mix yogurt, PB2 PURE powder and salt well.  There are slight differences between the Madagascar and Blended Vanilla as far as macros, so choose the one that suits your nutrition better.  Madagascar has slightly higher carbs, but 1 gram more protein and less fat.  Blended has slightly more fat, with less carbs and slightly less protein.  I like the taste of the Madagascar better.

Slowly whisk the gelatin liquid into the yogurt mix

Portion out into 6 small ramekins or a 9” pie plate and  refrigerate.

Recipe makes 6 small ramekins

8.8 grams protein

4.5 grams total carbs

3.9 grams net carbs

1.8 grams fat
