Beef Stew (Low Carb)

Beef Stew can be flavorful and quick without the carbs!  A traditional Beef Stew calls for potatoes, tomatoes paste and sometimes sugar in the rub.  Swap out potatoes for chayote, the tomatoes for pumpkin and use my No Sugar Meat Rub.  Flavor packed and ready for the week!

1700 grams lean beef stew meat (3.75 pounds)

25 grams No Sugar Meat Rub

250 grams chopped celery (4 large stalks)

575 grams chopped carrots

38 grams chopped onion

800 grams raw, chopped chayote (4 chayote)

25 grams garlic powder

15 grams chili powder

200 grams canned pumpkin

9 grams beef bouillon

225 grams Worcestershire sauce (8 ounces)

350 grams water (1.5 cups)

Preheat oven to 300 degrees

Thoroughly coat beef stew chunks with Meat Rub.  We are NOT browning this ahead of cooking.

Add remaining ingredients and coated beef into deep dish roasting pan and combine well.  Cover tightly with foil.

Cook for 2 hours, carrots should be tender.
