Protein Oatmeal (Oats & Cauliflower)

If you are Keto, this is not the oatmeal for you, but if you are low carb, this hearty breakfast ticks all the boxes! Eggs for protein, cauliflower for a veggie and oats for the nutty, creaminess and texture you love in a hot cereal. You can add fruit or yogurt and top with Sugar Free Maple Syrup.
100 grams UNSWEETENED almond milk
180 grams water
1.5 grams pink or sea salt
2 grams pumpkin pie or gingerbread spice
40 grams (or less if you need less carbs) steel cut or old fashioned oats, dry
100 grams (2 large) eggs
150 grams egg white liquid
100 grams cooked riced cauliflower
100 grams sugar free maple syrup

1. Bring the almond milk and water to a covered boil

3. Stirring consistently, uncovered, simmer for 6 minutes


2. Add in the steel or whole oats, salt and seasoning

4. Pour in the egg, egg white and cauliflower into the simmering oats and simmer until all eggs are cooked and no translucent whites remain. It will thicken.

Once all eggs are cooked and integrated, pour into a bowl top with sugar free maple syrup! You can add fruit or yogurt and enjoy your warm, nutrient packed meal!
