Chocolate Pudding

Indulge in a delicious & healthy chocolate pudding! Creamy, satisfying, and packed with protein to fuel your day or satisfy your sweet tooth.  There is no sweetener added, aside from what is in the yogurt, but you could add your own, top with Reddi Whip Zero or garnish with red raspberries for additional sweetness!

8.6 grams (1 packet) Knox gelatin

1 cup boiling water

.5 cup cold water

450 grams Too Good Madagascar Vanilla Yogurt, you can use the Blended Vanilla too, for slightly adjusted macros

12 grams unsweetened cocoa powder

1.5 grams fine pink salt

Boil one cup of water

While  the water is boiling add one packet of gelatin  (8.6g) into a half cup of cold water in a bowl, mix, and let’s sit for at least one minute

Now add one cup of boiling water into the cold water gelatin mix and mix well 

In a second larger bowl mix yogurt, salt and unsweetened cocoa powder well.

Slowly whisk the gelatin liquid into the yogurt mix

Portion out into 6 small ramekins or a 9” pie plate and  refrigerate until solidified.

Recipe makes 6 small ramekins

6.9 grams protein

4.2 grams total carbs

3.2 grams net carbs
