Tarragon Chicken Salad

Tarragon Chicken Salad is normally made with grapes, raisins or dried cranberries, but those may not fit into your low carb or keto lifestyle, so in place of those, I use chopped chayote and seasoning for the sweet, tangy flavor.

Ingredients

6 grams of homemade mayonnaise

100 grams cooked and cooled chicken breast

75 grams of cooked chayote

1.5 grams dried tarragon

1.5 grams cinnamon

1.5 grams fine pink or sea salt

Instructions

Bake plain chicken breast in oven at 350 degrees for about 40 minutes, let cool.  Ideally this recipe can be done with bulk cooked chicken or leftover chicken breasts.

Dice and Sautee Chayote with minimal fat and let cool.

Combine all remaining ingredients and serve on Egg Bread, Egglife wraps or over salad!
