German “Potato” Salad

German potato salad is traditionally done with…uh…potatoes…but on a low carb or keto diet, that may not be in the cards, so swap out the potatoes for cauliflower florets adn you still get all the flavor!  I can see this also being done with chopped chayote!

Ingredients

850 grams raw chopped cauliflower (about 1 large head)

100 grams onion

30 grams celery

100 grams red, yellow or orange pepper

100 grams cucumber

30 grams cooked bacon (crispy)

60 grams white wine vinegar

15 grams olive oil

6 grams fine sea or pink salt

2 grams ground black pepper

1.5 grams dried parsley

Instructions

Microwave cauliflower in a covered bowl until soft (about 10-15 minutes)

Cook about 3 slices of thick cut bacon well done and crush

Dice remaining vegetables adn mix all ingredients together

German potato salad can be eaten warm, but I tend to like to let it sit in the fridge overnight and absorb the flavors.  Because there is no mayo, this makes for great picnics!
