Meaty, cheesy and delicious, this Ziti gets all the YUM without the high carb, processed pasta.
Preheat oven to 375F
Toast fennel seeds in dry pan. Add ground beef and brown ground beef . Drain any fat.
Add in Italian seasoning and tomato sauce. Simmer 10-15 minutes or until thickened.
In a food processor, blend cottage cheese, nutritional yeast, egg, parsley and 100g mozzarella cheese until smooth.
Add a thin layer of sauce to the bottom of a nonstick 9×13 pan.
Layer half of the hearts of palm, top with half of the cottage cheeses mix, and half of the meat sauce.
Add remaining hearts of palm, remaining cottage cheeses mix and sauce, and top with remaining mozzarella cheese.
Bake 25-30 minutes or until golden and bubbly. Let sit 15 minutes.
