Cooking in bulk can make the week very easy, or feed the whole family while keeping your goals in sight! This chicken broccoli casserole gets your protein, veggies and flavor in!
600 grams boneless, skinless chicken breast, raw
600 grams broccoli, raw
140 grams (5 ounce bag) pork rinds
25 grams nutritional yeast
6 grams Italian seasoning
6 grams garlic powder
3 grams fine sea or pink salt
250 grams light canned coconut milk
50 grams fat free shredded cheddar
Preheat oven to 350
Chop raw chicken and raw broccoli into bite size pieces.
Sautee chicken in nonstick pan until cooked. Add broccoli and heat through. Don’t fully cook broccoli.
In a large bowl, crush pork rinds and add seasonings and coconut milk. Mix well.
Add chicken and broccoli, as well as shredded cheddar, to pork rind mix and coat chicken and broccoli well
Spread in casserole dish cover with foil. Bake 30 minutes. With 10 minutes left remove foil.
