Nothing like a hot bowl of high protein chili to keep you satisfied for hours, but often adding beans and tomato paste raises the carbs higher than workable for most clients. Instead, leave out the beans and replace canned pumpkin for the tomato paste!
1 pound 96% lean ground beef
1 pound extra lean ground turkey breast
350 grams diced onion (1 large)
160 grams diced yellow pepper
60 grams diced poblano pepper (half large)
822 grams diced canned tomatoes (2 14.5 ounce cans)
170 grams canned pumpkin (6 ounces)
2 cubes beef bouillon (2 teaspoons/12 grams)
2 cups water
75 grams minced garlic
10 grams paprika
3 grams onion powder
8 grams chili powder
4.5 grams pink or sea salt
4 grams granulated garlic
2 grams ground cumin
2 grams ground black pepper
In a large, deep pot, sauté ground meats, peppers and onions until meat is cooked.
Add in remainder of ingredients and simmer at least 30 minutes, stirring occasionally.
