Tiramisu

The beauty of Tiramisu is the coffee flavor infused in the spongy layers enveloped in the cream.  Now you can make it more macro friendly and protein focused!

Ingredients

16 ounces egg whites

60 grams egg white powder

3 grams fine sea or pink salt

10 grams fine instant coffee grounds

475 grams prepared and cooled espresso

240 grams heavy cream

225 Two Good Vanilla Yogurt

54 grams Swerve Confectioners

5 grams unsweetened cocoa powder

Instructions

Preheat oven to 350 degrees

Bring egg whites to stiff peaks

Weigh out egg white powder, fine ground instant coffee and salt and add to stand mixer and incorporate well.  Don’t over mix!

Spread “batter” into Bar Pan with sides and bake 30 minutes at 350 degrees, allow to cool in oven.

While bread is cooking/cooling, whip heavy cream.  Incorporate Two Good Vanilla yogurt and Swerve Confectioners into it.

When bread is cooled, slice into bite size pieces.  Place prepared cold espresso in a bowl and mix in bread bites to absorb the espresso.  Place half the bread bites in a Trifle Bowl (or other deep serving dish or pan).  Layer half the cream, another layer of bread and the last layer of cream.  Dust with cocoa powder and serve!
