Coconut Custard

The snap of coconut flake mixed with the creamy custard brings this satisfaction level of this no sugar coconut custard to a 10!

Ingredients

50 grams raw egg

200 grams raw egg white

100 grams light canned coconut milk (can substitute unsweetened almond milk for less fat)

2.75 grams coconut extract

1.5 grams vanilla extract

.25 grams stevia powder

20 grams unsweetened coconut flakes

1.5 grams fine pink or sea salt

Instructions

Preheat oven to 300°
Set 4 small to medium size ramekins in a water bath.

In a pot, simmer coconut milk, salt, extracts and stevia.

Whisk egg and egg whites in a separate bowl.

SLOWLY pour the milk mix into the egg mix while whisking.

Ladle out into ramekins and bake 40 minutes. Let cool and serve!
