My mom used to make a casserole type dish with potatoes, carrots and kielbasa. Well, potatoes and carrots are pretty high in carbohydrates if you are trying to stay keto or low carb, so I got to thinking…how would this work with chayote and radishes? I chose a leaner kielbasa (turkey) and the carbs are on the high end for a single dish per serving, but one can absolutely make it fit in a Keto diet. This one-pan meal is flavorful, quick and easy to make in bulk for multiple servings for the family or you!
680 grams turkey kielbasa
40 grams diced onion
250 grams cleaned adn trimmed radishes
120 grams raw mushrooms
575 grams raw chayote (2 chayote)
10 grams butter
1 gram dried thyme
6 grams fennel seed
6 grams smoked paprika
10 grams minced garlic
3 grams fine sea or pink salt
Heat large skillet pan in medium high heat
Slice Kielbasa into bite sized rounds
Chop chayote, radishes and mushrooms into bite sized pieces
Melt butter in pan and sauté vegetables with minced garlic
Add dry seasonings
Sauté until vegetables start to soften
Add chopped kielbasa and continue to sauté until kielbasa starts to caramelize and liquid from vegetables reduces
